One Pan Sausage and Rice



My family lovingly refers to this dish as Sausage Fried Rice - and I guess it is.  It's a quick and easy recipe, that tastes amazing - even though it just looks like "brown food".

Serves 6



4 Fresh Italian Sausages, sliced into bite sized pieces

1 small Onion, finely chopped

1 small Green Pepper, finely chopped

1 Tbsp Oil

2 cups Chicken Broth

1 tsp Garlic Powder

1/4 cup Soy Sauce

1 cup Uncooked Rice

1-2 cups of Any Other Veggies you would like to add (Here I added 1 cup frozen mixed Veggies and a can of baby corn, cut into bites)


1.  In a skillet, saute Sausages, Onion and Peppers in the oil, until Sausages are browned and cooked through.  Remove from skillet.

2.  Add Broth, Garlic Powder and Soy Sauce.  Give it a whisk and bring to a boil.

3.  Once boiling, add Rice and Additional Veggies, reduce to low, and let simmer 20 minutes, until Rice is cooked and Broth is all absorbed.

4.  Increase heat to medium-high, return the Sausage mixture, and give it a quick stir fry to heat through.

Serve hot.
