Easy Greek Chicken with Tzatziki Sauce

This is an incredibly easy recipe with incredible flavour!  I don't always make the Tzatziki sauce to accompany the chicken, but I make the greek chicken a lot!

This is also my go-to chicken when meal prepping - tastes great in any salad (even Caesar) and is perfect for wraps and bowls!

The recipe can easily be doubled or tripled if you're looking for big batch cooking - and the Chicken can be made in advance and frozen uncooked - it freezes well.  (The Tzatziki is not recommended for freezing).

Serves 4

4 Chicken Breast

1 tsp Oregano
1 tsp Cumin
1 tsp Onion Powder
1/2 tsp Paprika
1/8 tsp Cayenne
1/8 tsp Salt
3 Tbsp Lemon Juice
2 tsp Olive Oil
2 Garlic Cloves, minced

Tzatziki Sauce:
1/3 cup Cucumber, peeled & finely chopped
1/3 cup Plain Yogurt
3 Tbsp Sour Cream
2 tsp Dill
2 tsp Lemon Juice
1 Garlic Clove, minced
1/8 tsp Salt
1/8 tsp Pepper

1.  Combine all the ingredients (except Tzatziki ingredients) and pour over Chicken in a greased baking dish.

4.  Bake chicken at 350' until cooked through, 25+ minutes (depends on the size of the chicken).

5.  While baking, whisk the ingredients for the Tzatziki.  When the chicken is cooked through and no longer pink, serve with a dollop of Tzatziki.
