20 Minute Chicken Strips - From Scratch! AKA Homemade Shake and Bake

This is my go-to recipe when the kids are clambering for Chicken Fingers.  It's super easy and the coating has a nice crisp.  If you are like me, and do not have a lot of room to keep this in the refrigerator, it only takes minutes to whip up a half or quarter recipe.  On the flip side - if you're looking to meal prep or freezer cook, this recipe can also be doubled or tripled.

Makes 4+ cups

2 cups Flour

2 cups Bread Crumbs, Crushed Crackers or Corn Flakes

2 Tbsp. salt

1 Tbsp. sugar

2 tsp. garlic powder

2 tsp. onion powder

2 Tbsp. paprika

Mix well and store indefinitely in the refrigerator in a covered container.

To use:  Add 1 piece of meat to a bag with the Shake and Bake.  Shake until well coated and bake until cooked through.

Watch my video above, I just whip a 1/4 recipe up, toss to initially coat - give it a little squeeze to add a little extra coating, and bake until done.  I roasted some potatoes for about 25 minutes, then I add the chicken strips to the same pan and let bake until done - here, about 20 minutes - added a quick salad and dinner was done!
