Thai Chicken Pasta



This was a simple but very yummy Thai dish.  If you're using pre-cooked or leftover chicken, you could have it all done in the time it takes to just cook the pasta!  The ingredients are basic staples you probably already have on hand!





1/2 box uncooked linguine $0.49
1/2 cup salsa $0.93
2 tablespoons peanut butter $0.10
1 tablespoon water $0.00
1-1/2 teaspoons molasses $0.31
1 teaspoon soy sauce $0.08
1 large chicken breast $1.69
1 tablespoon minced fresh cilantro $0.40
Total $4.00

Serves 2 (Very Generous!)
At the last minute, as I was cooking, I decided to toss in half an onion and half a red pepper.
(Grand Total $4.33)


1.  Cook pasta according to package directions.  Saute the chicken until cooked through and no longer pink.  Toss is chopped onion and red pepper, sauteing until fragrant.



2.  In a bowl, combine salsa, peanut butter, juice, molasses & soy sauce.  Whisk until combined.  Add to pan and cook until heated through.



3.  Add drained pasta and toss to heat through.  Serve with some fresh chopped cilantro sprinkled on top.
