Butter Pecan Chocolate Chip Cookies - From a Cake Mix!

While cruising on Pinterest looking for a reason to use all those cake mixes I bought on sale, without actually making a cake - I came across a recipe for cake mix cookies.


This recipe has 5 ingredients, takes 5 minutes to make, and makes 3 dozen cookies.  Start to finish - including clean up - was less than half an hour, and hubby thought I slaved away all afternoon whipping up these little bad boys from scratch!

It reminded me of that Rice Krispies commercial where the mom lounges away in the kitchen, then last minute whips up the rice krispie treats, and tosses a little flour on the face before presenting them to the family.  Anyone remember that one, or am I dating myself? lol

Ingredients:
1 box cake mix (I used butter pecan) $0.87
1 tsp baking powder  $0.04
2 eggs $0.38
1/2 cup vegetable oil  $0.15
1 cup chocolate chips $0.98
Total Cost: $2.42

1. Preheat your oven to 350'.

2. Mix together the cake mix and baking powder.

3. Add in eggs and oil.  Mix until well blended.  The batter will appear oily and will be very stiff.

4. Mix in the chocolate chips.

5. Drop by spoonfuls onto greased cookie sheets.

6. Bake for 10 minutes, allow to cool a few minutes before transferring to cool completely.

That's it!  They are soft, moist and a little chewy.  Not 'cakey' at all.  And the buttery, nutty chocolatey goodness is amazing!  I'm looking forward trying carrot cake with raisins, or french vanilla with toffee bits... or devil's food with white chocolate... or....

UPDATE**  I just made these using Angel Food Cake mix - and it's quite an interesting cookie.  It's flakey AND chewy, but I should have added some spice - maybe a sprinkle of cinnamon or ginger... Still devouring them though!
