Chocolate Swirled Banana Blondies

What do you do with 7 over ripened bananas and the thought of more muffins turns your tummy in dread?


EXACTLY!!

Ingredients:

1 cup butter $0.43
6 bananas  $1.12
3/4 cup brown sugar  $0.28
3/4 cup sugar  $0.13
1 teaspoon vanilla  $0.02
3 eggs  $0.57
3 cups flour  $0.60
2 teaspoons baking soda  $0.06
1 cup chocolate chips  $1.10

Total Cost: $4.31 @ 32 servings = $0.13 / serving

Now the recipe says it bake it in a 9x13 pan.  After assessing the batter in the mixer, there was no way it was all going to fit - so I pulled out the Big Gun - my 12x18 pan - and I'm glad I did!  In the future, I think I'll attempt this recipe halved.  So instead of making 16 brownies, it actually made 32.



1. I turned on the mixer and added these one after another - Butter, Bananas, Brown Sugar, White Sugar, Vanilla and then Eggs.  I turned it off, scraped down the sides, fired it back up again and then added the baking soda, and once combined, the flour.



2. I added half the chocolate chips and gave them a quick whirl.



3. I lightly sprayed the pan with non-stick spray, but it probably wasn't necessary.  I then dumped the batter in and sprinkled the remaining chips over top.  I popped it into the 350' oven for 5 minutes.



4.  After 5 minutes pull the brownies out of the oven, as the chips on top have started to melt.  Using a butter knife, just run it along the top of the batter to 'swirl' the chocolate.




5.  When you're happy with the 'swirliness', pop it back into the oven for another 25 - 30 minutes.



6. Whola!  Let cool before cutting into bars.  Of course we couldn't, so we dug in as soon as it came out, and hubby burnt his mouth on chocolate as he was trying to figure out how I made it 'Swirly'.  I wouldn't tell, and seeing as I made him subscribe to my blog, let's see if he actually reads my posts - haha!



These ended up being more like a super-moist pound cake - and the chocolate chips are enough sweetness that you don't need frosting.  The only thing that would make these more perfect is a big ol' scoop of vanilla ice cream!
