Chewy Chunky Peanut Butter Cookies



This is a recipe I have been using for years!  It is just baked for the chewiest of most delicious cookies.  I use crunchy peanut butter, but you can very easily use smooth if you prefer.

Makes 4+ Dozen

1 cup Butter (or Margarine)
1 cup Crunchy Peanut Butter (or Smooth)
1 cup Sugar
1 cup Brown Sugar
2 Eggs
1 tsp Vanilla
1/2 tsp Salt
1 tsp Baking Soda
1 tsp Baking Powder
2 1/2 cups Flour


1.  Combine ingredients in the order given.  (I just toss it into the stand mixer one after another, never turning it off until it's all combine.)

2.  Scoop by tablespoonfuls (I use a Stainless Steel Scoop with Trigger ) and bake at 350' on a greased (or parchment lined) cookie sheet for 8 - 10 minutes, when the edges are just browning.

3.  Let cool 5 minutes before removing from the sheet.

When you pull these from the oven, they will look under baked and puffy.  Trust me, just let them cool and they will flatten to the peanut butter amazing-ness that they are.
